I have a late 2015 build 21.5 inch iMac which I stupidly "upgraded" to Big SLUR 11.2. Now it crashes many times a day. Tex which used to work for my mathematical publishing under Catalina stopped working and it is impossible to get it to work. Nortons doesn't work. Emails go missing. It is slow and many other things don't work. I am resolving this my moving everything over to my Surface book and One drive never to return to the Mac world (I have run both systems since the mid 1980s and have seen how both have ebbed and flowed in terms of reliability etc). Apple is at its nadir now - it is a phone manufacturer and should stop pretending it is in the business of general purpose computers.
 
But you said this a year ago, and yet here you still are…

I have a number of 2015 21.5 iMacs on Big Sur without issue. If I were in your position, I would back up everything to OneDrive, wipe the computer, and do a fresh install of Big Sur. Don't do the Migration Assistant and manually move files back and reinstall the apps you need. Before you do, you might want to see if "Tex" has known issues with Big Sur. If so, do a clean install of Catalina and live happy.
 
You should reinstall Big Sur and start with nothing but stock apps. Things go wrong sometimes whether its a Mac or Windows.

We can try and assist you in getting problems resolved if you wish. If not, there wasn't much point in posting your rant. It's like going to the doctor and saying doctor, I am upset that I am not feeling well. The doctor ask you for specific details as to when the problems started and what kind there are, and all you reply with is, I shouldn't get sick. I am tired of when I get sick. If you can't prevent this from happening doctor, I will go elsewhere.
