I have a brand new iMac and the resolution is so great (and awesome) that I have a hard time reading some font because it is so small. For example in iChat, it says my font size is 14, but I can hardly read it on my screen whereas the person I am talking to says it is huge on his screen. Is there a way to permanently change font sizes on my screen without compromising the resolution?
 
Sadly, no. Each application (Finder, iChat, Safari, etc) has to be changed manually, and not every piece of text can be enlarged. :(

Try hitting the control key and scrolling up (using the mouse ball); or pulling the iMac closer to you.
