Crown + side button press does nothing. Any other ideas?
It does work. You have to press both down at the same time. Just don't hold them down too long or it will cancel the action.

And not sure if bug or intentional but having screenshots enabled causes the pause shortcut to also take a screenshot. In some of the earlier betas the screenshots were disabled in the workout app so that you could pause without taking screenshot, but there was no way to take a screenshot of the workout app. Now it seems that the only way to use the pause shortcut without taking screenshot is to completely disable the screenshot feature.

Stopping running and waiting for workouts pause is not really ideal because I often reach my distance goal, and instead of coming to a hard stop, I walk for a short bit. I don't want that walking to slow down my average times.

You're sure? The number will be grey and there will be "Paused" at upper left. It works on mine.

I turned off the screen shot feature immediately upon installation of watchOS 3, and the presses don't work.

Pretty sure. The "Paused" is just because you've stopped moving (or, are not moving). I need the crown + side but to "end" the workout.

I swear I'm not trying to be picky/particular/needy here. I really just need to stop my run! I cannot do that, and my mind is blown, because this is pretty basic stuff.

Maybe tries restarting the watch? Or if you're close to Apple Store then goes to have they look at yours?

For testing purposes you could turn on the screenshot feature, start a workout and then try to take a screenshot. When you do manage to take a screenshot the screen flashes white, you get a taptic feedback and a sound effect (if you have alert sounds on) and the workout will pause/un-pause.

If you manage to take a screenshot without the workout pausing/un-pausing there is something wrong with your device. A restart might fix it.

I restarted the watch, and will try again after my next run.
 
Pressing both buttons pauses the recording of the workout. You would swipe to the side to get to the End/Lock/Resume screen. If you're too sweaty to get a good swipe, it'll stay paused for when you get a chance to dry off your finger for a more reliable swipe.

I finally tried it earlier today, and I think it's better than the old Force Press because of the reliability of the hardware buttons. Force Press was a good idea, but reliably tapping End with a sweaty finger after bringing it up was difficult.
