I am currently using an iphone and will be activating the 4s tomorrow. Do I use the SIM from my iphone 4? or the SIM that comes in the new phone?

Sync and backup your current phone with iTunes now.
When your 4s arrives sync it with iTunes. There is no need to swap sims. Your 4s will have a sim in it and it will "activate" once your first sync is complete. My original sim is still in my iPhone 3G.
If you plan on selling your current phone I would remove the sim.
