I found under settings/general/accessibility/ black on white
makes the background behind the icons white and changes all the other menus and pictures to give it the negative look like a camera would give you.

i have a 3G on 3.0, and i don't even have an "accessibility" section.
wish they had this for the iphone 3g 🙁 .. ZOMG but thank you poster above that posted how to do this on a mac!!! <3 ILY

Another cool trick is to right click on a dock icon, and then leave that menu up, then hold shift and tap the button for expose about 10 or so times).
Pretty fun to do on a friends computer while theyre away 😀 😀
