For me the color scheme of the Ultra is a dealbreaker. Imo the orange/silver scheme is kind of tacky because the orange buttons restrict strap color combinations, whereas my "old" SB Ti Applewatch 6 seems much more versatile, easier to mix'n'match and pairs nicely with black metal straps. Do you concur?

I think the darker color would have made the watch look even bigger. Having it as the only color at launch could have added to the negative press about the larger size. I really enjoy my space black titanium’s brushed finish, and I hope Apple releases a space black Ultra next year after seeing promising sales data.
My space black link bracelet and Milanese band have me hesitating on buying the Ultra in natural titanium. I think it would clash too much. OTOH, the Ultra seems to be a difficult watch to “dress up” with the nicer metal and leather bands so I may just need to let go of that idea entirely and keep it for adventure/casual use.

I suspect the Ultra will be an update every 2-3 years kind of product, so they need to save something for the off years.
 
It's possible that even with the DLC finish, Apple testing showed that an "activewear" watch that was constantly being banged against things like rocks and such would show too many scratches.

You can evidently polish out minor scratches on the "naked" Titanium, but this is not possible to my understanding with the DLC Graphite finish.

Color coated metals still get scratches that show the raw metal underneath. I imagine that is a factor for an adventurous watch.
