Has anyone had any success with bluetooth device pairing? I know that SDK currently doesn't support it but do you think it is something that Apple should support at SDK level?

You cannot do anything at the moment as you note. Personally I would like to see the entire IOBluetooth framework from desktop OSX on the iPhone...
