I currently have my Windows XP (32-bit) Boot Camp partition taking up *all* of my 160GB hard drive space on my Macbook Pro.

I want to get rid of that partition and install Windows 7 RC (64-bit).

    What is my best option?

If you want to save your current partition, you can use WinClone, it is free

You cannot upgrade XP to Windows 7 RC
Probably the easiest thing to do is to remove your current Boot Camp partition with Boot Camp Assistant and recreate a new Boot Camp Partition and do a clean install

You also forgot to add least bug ridden, most stable and best way Dawg. You don't have to remove the BC partition, after you've backed up your data boot off the 7 DVD, click custom setup and reformat the bootcamp partition.
