i have a imac27 i7 and installed a windows 7 64 on it. that part works fine.
but when i restart my imac the option key work less than 50% of the time....
i tried holding it down and pressing it numerous times. i use the standard wireless keyboard that came with the imac.
any solution to this?

Based on my experience with this issue the wireless KB is not being picked up/connected quick enough by the machine that it bypasses the "option" to bring up the boot menu. Wired keyboard works every time for me.

get a wired keyboard. as mentioned already, the wireless is flaky, and because it is bluetooth, there's no guarantee that the imac will open the connection before the boot sequence
