Boot Camp Assistant asks you on which drive you want to install Windows, and then wether you simply want a partion of that drive or format the whole drive for Windows.

Yes, but you'd have to check if you can install the 64 bit or 32 bit version. You probably also need to run Snow Leopard for Windows 7 support via Boot Camp.

You can run the 64-bit version, though apparently a lot of people have had problems doing so. I didn't personally.
