Bought a new MBP 2017 15" with a 512gb ssd. I have a few games that I'd like to play (rarely), and need to install. I tried it once already with 120gb size, and one game (Infinite Warfare) told me I didn't have the 70gb needed to install. I was like are you kidding me! So, what is everyones recommendation that I do for size of the partition or should I use an external drive for Steam and games? Would the external drive cause any issues if it's not connected while using the laptop till I need it for the games?
 
Yes, use an external drive. I'd do Windows and everything on the external. If you want the performance of an SSD. Look at those which support USB 3.1 Gen 2. You'll have more options with a USB 3.1 Gen 2 enclosure and SSD purchased separately.

There are also USB 3.1 Gen 2 with NVMe support. Not sure how well they work with Macs. A regular SSD is plenty for Windows and gaming anyways.

Bookmarked! Thank you sir for that link. That will help a lot. I am getting a 2TB Caldigit Arc Pro 2 with my Dock free, so I will make that my Windows drive. Do you know if I can use half of it for my MAC and the other half for Windows if I partition it that way?

I don't see why not. When you get to the part about partitioning. Use ExFAT for the 2nd partition. That way you can easily access files between Windows and OS X.
