Hi so I bought a used iPhone 12 a few weeks ago. I noticed that when I go to the settings page it says it has apple care+ with theft and loss coverage. In the past I’ve bought iphones in the past that have been covered under regular apple care and even though I was not the original owner I was able to have still use the apple care since from my understanding apple care coverage is for the phone regardless of who bought it.

So my question is how does theft and loss coverage work? Do I need to show proof that I bought this iPhone through apple ?

For Applecare Plus, they almost always require proof of purchase of the agreement and/or device. If the person you bought it from has that, and is comfortable sharing that, you'd be covered at that point. They can also officially transfer ownership to you: https://support.apple.com/en-us/HT202712
Ah i see. How about using it for repairs if I need to have the iPhone repaired?
 
AppleCare+ follows the phone as long as previous owner doesn’t cancel the monthly payment subscription, or call Apple Account Services to cancel and get the remaining balance credited for not being used. That happens if they pay in full.
