the body temperature measurement function does not appear on the new apple watch 8 watch. I do not understand.

I checked it. There, too, I can only add data manually when recording the menstrual cycle.
Check out this YouTube review. There is a point where you can see a card in the Health App called “Wrist Temperature” The reviewer says it takes 5 days of use for it to calibrate and appear.

View your wrist temperature data

  1. On your iPhone, open the Health app.
  2. Tap Browse, then tap Body Measurements.
  3. Tap Wrist Temperature.

You need 5 nights to establish a baseline before it will display temperature data. It only measures during the night while sleep tracking is active, there is no way to measure on-demand.

"there is no way to measure on-demand" - This is sad :(

Yep

I'm hopeful that Apple will use this year to gather data, so that WatchOS 10 brings some more functionality to the temperature sensor. Right now it's almost useless unless you're using it for cycle tracking.

And sleep tracking.

And sleep tracking.
FYI wrist temperature doesn't factor into the calculations for the amount of time spent asleep but you can compare the data manually in the health app. So only useful if you're checking that comparison chart each day.

Sleep

  • Sleep stage tracking using data from the accelerometer and heart rate sensor to detect time spent in REM, Core, and Deep sleep, as well as awake
  • Comparisons chart provides a view of heart rate and respiratory rate alongside time asleep in the Health app on iPhone

Checking each day or trending over time and checking each week/month/year.
I don't know the implications of the temperature trend.
