I remember Apple saying they have an all new ambient light sensor to help with the always on display during the keynote, that might be one of the culprit.
 
I'm comparing 2 aluminum watches - 4 and 5. They have the same screen. The 4 get brighter in normal and low room lighting conditions. I suspect this is something that can be tweaked by Apple to improve, and I also suspect its something they are doing to eek out some additional battery life.
 
I have bought a AW5 SS, and compared with my AW4 SS, the bright is lower, seems the auto brightness to be more aggressively.
im considering returning the aw5 and continue with my aw4.....

Double check your settings to make sure they're both set where they need to be for brightness. I don't remember any noticeable difference when I was comparing, but that doesn't mean you're not seeing what you're seeing.

That said, at this point in the product cycle, I'd suggest just sticking with your AW4 until September when presumably we'll see an AW6.
