Bring back now playing interface

guys - if I play a YouTube video on my phone, an interface shows up on my watch allowing me to pause. However, if I hit the crown to go to another app, the YouTube pause button disappears. How do I get it back?

Same question for the Apple Music interface, once I lose it I don't know how to get it back
