Jailbreak and start using SBSettings to quit Apps? Or is it an easy fix? The button itself doesn't respond to anything.

Restore did not fix it.
I can press the button, it just doesn't respond to anything.

Can I just buy that piece separate or is the entire main board need to be replaced?

edit: it's a first generation touch

You can buy the button separately for a few bucks; the shipping will probably be more than the button. I tried to replace it on my daughters old gen1 but after getting the ipod open and prying out the battery and disconnecting the cables, I couldn't get the last tiny screw out on the circuit board without stripping it. I had to send it out. Cost $60. But the reason that one didn't work was, my daughter dropped it in the toilet. So it was a miracle it would turn on at all.
