External keyboard/mouse ... run it in "clamshell" mode.

"I cant get wireless / Bluetooth keyboard to connect in clamshell mode - as far as I’m aware…"

Then get a WIRED keyboard and mouse.

Tip:
Get a wired keyboard that has USB ports on either end (such as some used MacAlly's do).
Then get a Logitech wireless mouse that has its own "unifying receiver".
Plug the receiver into the keyboard USB port, and plug the keyboard into the USB port on the Mac (a USBa to USBc adapter will be required).

I think you can just mirror your display using a key combination while startup.

Let me google it.

Found it. "Command-F1," should turn on an external display as a mirror. Just press those keys in your MBA while starting up, with the external display hooked.

Thanks guys, all sorted now to a fashion.. Does anyone know how I can stop the monitor turning off when I pull the MacBook power lead out?

You should be able to, assuming you have Bluetooth turned on. I use a Bluetooth mouse and keyboard with an old White MacBook in clamshell mode.
Do you know how to stop the external monitor from shutting down when I pull the MacBook power lead (USB C) out?
