The printer works with AirPrint but not the scanner.Seems Brother have no drivers for your printer compatible that are compatible with BigSur. You could try to uninstall Brother apps and then try AirPrint.
Then try if you can add the printer/scanner to Image Capture.

What they said re: scanner drivers. Have had this happen in the past with "old" Brother printers/scanners. Can print via AirPrint, USB, but 99% of the time cannot get the scanner to work.
Might get one page to scan, but then need to reboot the Mac, restart the printer, hit scan button on the printer, etc, and might get another page to scan. But too miss than hit.
I can echo the above statements on Brother scanner. I had one on my iMac and the scanner would do nothing. It still does nothing. I tried searching for a driver but no luck so that thing is in storage now. It works fine with AirPrint although mine had some damage that prevented it from printing anyway - only used as a scanner in the last 5 years.
I phoned my nephew out of curiousity and his Brother software doesn't do scanning either. Very bizarre. The old HP Deskjet seems to work fine as a scanner via Image Capture. Seems like there should be some low-level driver in the printer communication that would let it work, but neither of our Brothers have such a thing.

I use VueScan too. Great tool. However Apple just admitted a problem that sounds like yours. MacRumors covers it today, take a look. Apple has a temporary fix which seems simple and says it will be permanently fixed in a future version.Have a look at VueScan. It works with my old CanoScan N670U which probably came out before some of the posters on MacRumors were born!
When my Fujitsu ScanSnap software was no longer supported by Fujitsu after Mojave I just started using VueScan and it works very well.
It is not free but well worth the cost and you can buy a perpetual licence which gives you ongoing updates.
There are regular updates adding new scanners and the developers are quite responsive in supporting new scanners.
It works well across all recent versions of MacOS up to and including Monterey.
