When I select a watch face like "Modular", where it displays the 3 character city abbreviation in the bottom right-hand corner along with the time for that time-zone, I've noticed mine stubbornly insists on showing "CUP" for Cupertino, CA -- even though I reconfigured world clock on my iPhone so my only clock being tracked is "Las Vegas, NV".

I just realized that I can customize the watch face, select that portion of it, and use the crown to dial up my Las Vegas clock as the default. But however minor, isn't this still technically a bug since I don't have Cupertino in my list of World Clocks anymore in the app itself on my phone? I would have thought the watch would have auto-deleted it when I removed it on the phone?
 
My watch is only showing the world clocks that I have on my phone - definitely no Cupertino. Have you closed and re-opened your phone since you deleted it? Not sure if would make a difference but worth a try!
 
Make sure iPhone and watch have same world time, restart phone and watch, then re customize your modular face, and you should be able to change CUP time
