I found a file called bugsnag_breadcrumbs.json in my user>library>Caches.

It seems to be constantly updating. It's collecting data and seems to be connected to error reports from what I could see. But there is very, very little info on this, so I thought I'd ask and see if anybody else has this and if they know exactly what it does.

A JSON file is basically a database of whatever information if was programmed to collect.
From what I managed to find online, in your case it seems to belong to Bugsnag software/framework/whatever, which is designed to do exactly that - "monitors application stability" - basically, collecting logs.
If you are a programmer, and that framework is being used in any of your projects - leave the file, or remove everything Bugsnag related (depending on your needs).
