I'm wanting to build an Automation in iOS Shortcuts to automatically change the EQ setting based on what Bluetooth devices I'm connected to. When I'm in the car and it connects to the bluetooth on my stereo, I'd like the EQ to automatically change to Jazz. But when I connect my AirPods Pro, I like more bass and want it to automatically change to Rock. It looks like this might be possible using Automations with Bluetooth but will require some custom scripting or something and I can't figure it out. Anyone got an idea on how to do this?

No, can't really do this. Closest you can get is to bring up EQ settings and then manually change it yourself.

Whip up a shortcut with the attached, and then setup Automations: when Bluetooth connects to XYZ device with action of Run Shortcut <insertshortcuthere>.

And even then, you will be prompted each time to allow the Shortcut to run.

I was able to take that and build a manual shortcut.

It's so weird to me that the EQ setting is nested so deep in the settings that it takes 4 clicks plus scrolling to make a change, and that there's no straightforward automation to change it nor can you ask Siri to change the EQ setting. You'd think I was asking for it to bypass some security measure the way that's locked down.
