The main 2 I am looking into are the new Sony ones (rumored to come out in 2020) and Apple headphones. I know the Sony 1000s are excellent. However the new ones could be an upgrade and the Apple ones could pair with my product better. Advice?
 
Are you looking for over the ear or in-ear? Wireless I assume? Apple and Beats headphones have a lot of great features, but good sound is not one of them. Beats studio 3's are almost decent, but are even better when used with correction software (such as TrueFi). Rumors of an Apple high-end headphone have been circulating for years.

There are a lot of wireless headphones out there, many are a lot better than the Apple/Beats products. As for integration I use Sennheiser Momentum in-ear and don't find them any less convenient than my Studio 3 headphones.

Over Ear, Noise Cancelling
 
I used a pair of Bose QC 20 I believe it was for a few years almost every day. If you need good noise cancelling right now I’d recommend you given the current ones a listen too.
 
I am using Bose QC35 since they were released. Everyday between 5-8 hours per day and battery still going strong. They are extremely comfortable. I had to replace ear cups this year because old ones had worn out. They are extremely comfortable. They are often on sale since when Bose 700 came out. The only negative about them is micro USB charging port.
 
I agree after todays' rumours maybe wait to see if Apple releases some noise cancellation headphones. I bet they will be beautiful designed and implemented.
A friend has the SONY 1000 headphones and they sound great. Connected to my iPhone X and playing an iTunes 256kbps download (Mastered for iTunes U2) I came to the conclusion that 1. Bluetooth 2. iTunes 256kbps files can sound bl**dy awesome as these headphones really shine. They only things that I didn't like were the plastic design which really lacked design and the over complicated app. Nice that the app ha a graphic equaliser though which really made a difference as I like a really bright sound. Apple should really learn something here and fit a graphic equaliser in their music app instead of stupid presets which 99% sound crap.
I have the AirPods Pro as I travel constantly and love the Apple ecosystem and ease of use. I love the noise cancellation especially for audio books! For me, everything about AirPods Pro is PERFECT! (I use wired BEATS Pro Headphones for DJ'ing and radio work - for video editing in FCPX I tend to use my AirPods Pro which are outstanding for using with the Apple TV 4K too - no lip sync issues).

Hold on a few more weeks just to see what happens on the Apple front is my advice!!!.
