What are the recommendations for software to by at time of purchase and what is best to wait? I am looking to buy my 1st apple machine other than ipod. I will be getting a MBP. Just don't know what else I should by at the time I do buy the laptop.

No reason to buy any software at time of purchase if you don't know what you want! Use what's there and buy as needed. iMovie and iPhoto will handle "some amateur video and photography editing" and "everyday tasks" are probably handled by the Mail, Safari, iCal, and OS X itself.
