If i wanted to buy a macbook with upgraded specs ( 2GB RAM as opposed to 1GB, 120 GB hard drive as opposed to 80GB ) Would i be able to go to the store and acquire these updated specs, or would i have to buy online?

Apple Stores have popular BTO options in stock, and they can also do upgrades in store.

In US stores the only in house they do is RAM upgrades. You could buy a hard drive and install it your self to save some money..
