iPod touch Buying new Apps... Risk?

So I have a jailbroken touch. if i upgrade it is going to screw up my ipod?...

is there anyway to Un-jailbreak the touch?

if u restore it will "un-jailbreak" it. im not gonna upgrade yet tho, cuz i already have those apps (for free too, lol) and a bunch of other good games/apps.
