I've tried a new configuration.
I've used the:
- monitor's DP cables (the pair)
- OWC Thunderbolt 3 Dock
- two adapters from DisplayPort to USB-C (to connect the DP cables to the Dock)
- the dock to the M1 MBP (tb3)
- separate power cable to the M1 MBP (the other tb3 port)

Also with the patch file from Flaky Goodness. Now I get all the possible resolutions & 30/60 Hz combinations. Including the proper 2560x1440 HiDPI @ 60 Hz. However the screen looks like this. The monitor's menu shows a resolution of 2560x2880 @ 60 Hz though.

That’s not right. What happens if you hook up the monitor (using the USB-C to DP adapters) directly to the MBP, without the dock?
And what’s the timing info for the 2560×1440 60Hz HiDPI setting?
Can you test the monitor with another (Intel) Mac or PC to see if you can get 5K at 60 Hz at all?

With the adapters connected directly - I get the full list now. However when selecting the 2560x1440 HiDPI @ 60Hz from SwitchResX, the monitor shows 3840x2160 @ 60 Hz (with a weird flicker). Attached the timing info you requested.
I don't have another Mac/PC :( the previous owner told me he got the 5k@60Hz on an intel mac mini. However with a different adapter - he couldn't vouch for this plugable one he gave me.

Ok, with the Plugable adapter. Now I'm getting the 5K @ 60Hz showing on the monitor. And in SwitchRes 2560x1440 HiDPI @ 60Hz!
HOWEVER - the monitor flickers like crazy. It's visible when looking at an image with different colors. It looks like it only flickers in certain areas of the screen (most visible in the center). :(

Ok the flicker has stabilized after about one hour. And it was gorgeous! :)
But this morning I moved the cables and the monitor went black, when I powered off/on the monitor it was back at 5k30Hz. fml
At least I know it can do 5k 60Hz. It's probably the adapter or cable - some connection issue.

I’ve been following this thread because I have a UP2715K, albeit am using an Intel Mac Mini at the moment. Even with that setup, I’ve found that the monitor is sensitive to cables. I purchased 8k compatible DP1.4 cables, which seem to do the trick. And my adapter is a Thunderbolt to dual DP adapter… I’m not at my computer at the moment, but I can dig up the exact model if you like. However, I purchased a few different ones, and all work.

I am connecting my Mac to the adapter through a Caldigit Ts3+ Thunderbolt dock.

Now for the flakiness and my work arounds:

1. I’ve never been able to boot directly in 5K. I have to disconnect one DP cable, reboot, and then once MacOS starts, plug in the other one. To make this process easier, I bought a passive DP A/B switch. I press a button to go down to one DP cable, reboot, and then press the button again once MacOS has loaded.

2. My computer never sleeps, but the display does turn off. At times it won’t wake. I have to cut power to the monitor (not just turn it on and off…literally pull the cord)l and the reapply and the monitor will wake. To automate this, I have the monitor on a remote controlled outlet… when it doesn’t wake, I turn off the monitor by pressing a button, wait a few seconds, and then turn on.

With these two works arounds, the monitor has been flawless. I discovered them back when I was running the display off a Mac Pro 2013 (trash can), so it’s not an issue of the Mac Mini.

for the 8k cables, I use these:

A 3m cable from one port directly to the monitor. A 1m cable from the other to the a/b switch, and then a 2m cable from the switch to the monitor.

Thanks MikeDr! I will try with some new cables and with your trick! I'll order some 8K DP cables 👍
I've also noticed the need to completely pull the power plug sometimes.
What DP A/B switch are you using? That's a pretty cool solution! You avoid ruining the adapter/cables this way over time.
