Is there a way to call an individual that you're in a text conversation with from within the text message? Like a quick way to just call them?

Yes, if you scroll all the way to the top of the text conversation, you should see buttons for "Call" and "Contact Info" (and possibly others, such as Facetime, depending on your phone model).
 
Ahhhhh thanks must have overlooked that.

On that note I know you can press the clock to quickly scroll to the top. Is there a way to quickly scroll back to the bottom of a conversation?

I don't know of a quick way other than exiting the conversation and going back in.

Yeah that's the only way I know of I thought there may have been a quick scroll down somehow like there is to scroll to the top.
 
If you type a message and send it, it will return to the bottom. Not ideal if you want to read the latest message though...
