Can my 2020 M1 MacBook Air USB-C charging cable (that gets plugged into its power cube) be used for faster data transfer on iPhone 15 Pro Max? Or will I need to purchase a new cable to get faster data transfer? Thanks in advance.

Nope, Apple bundles a charge cable which means it's only capable of USB 2.0 speeds.
