When you turn off cellular, does it disappear from the menu bar entirely or does it stay?
 

Ok cool. I just bought it for the GPS since I often can sit in the car for hours on end, and I would like to use GPS from time to time to see where I might be (I realize names won't show up but it will at least show me in what part of the state I am in)

Use an app like maps.me that has downloadable maps for almost the whole world. It really is excellent for when a connection of any kind is unavailable. I use it here in the US and used it in Europe last year.

Doesn’t look like signal bars will go away anyhow. Mine still stay despite turning off mobile data in control centre. I’m using esim so removing SIM card isn’t an option for me.

On Air 3 with eSIM, it does go away for me.

It goes away for me also, Mini 5 with a SIM card. Unless it is different on the Pros / with a different OS version.
