However I believe the person who bought it needs to be the one who picks it up.

Not true. I'm in NYC and I purchase from the Apple store frequently and my daughter in Texas is able to pick up the items. I have even made Genius Bar appointments for her

When you order online, it give you the chance to specify the name of someone else you want to pick it up.

nope. just need to make sure the person is listed as an authorized pickup. There is a place for it on the order.
