I want to get two 27 inch Dell S2725QS monitors (Amazon Link), which have no USB-C ports but have 2 HDMI and 1 Display 1.4 ports.
Can I daisy chain the two monitors with my Macbook Pro M1 or would I need to have two HDMI output ports on my Macbook Pro?

If yes, will daisy chaining two monitors downgrade any of the specs (ex. 120 HZ, quality, color, etc)??

You can also investigate a dock if you need / want to connect more things. There are some very nice ones out there.

No.

First, MacOS doesn't support DisplayPort daisy-chaining.

Second, The "M1 MacBook Pro" (i.e. the original 13" model) only supports a single external display anyway. (Unless you have a M1 Pro or Max MacBook Pro - congratulations, Apple, on the confusing product naming!)

If you see any hub/dock/dongle claiming to support dual displays on a Mac check very carefully that it actually supports two independent displays (not just mirroring) on your Mac model. Most Mac-friendly hub/dock makers have charts on their website.

What might work for you is a hub/dock/dongle that supports DisplayLink - that lets you connect additional displays over USB even if your Mac doesn't support that many "regular" DisplayPort/HDMI/TB displays. Downside is that these "soft" displays need third-party drivers, use compression to work over USB and may introduce lag or artefacts - fine if you just want extra space for test/code/reference material but maybe not ideal if you're running 3D or video on them... Again, check compatibility with your Mac model and MacOS version before buying.
