If I use a USB-C dock that has an HDMI and a DP port, can I extend to two external monitors through one thunderbolt 3 port? I'm using a 2017 15" pro. From what I've found it doesn't seem like you can which is surprising considering the impressive 40 gbps bandwidth of the port.
 
It really depends on the dock and your cables.

I have two LG 32" 4K thunderbolt monitors, and I have them daisy chained together using a single thunderbolt cable. In my case I'm connected to an eGPU, which also has a third HDMI output going to a TV. The eGPU drives all 3 displays at 4K 60Hz just fine with a single Thunderbolt cable plugged into my late-2018 Mac Mini.

Also keep in mind not all USB-C and devices are actually Thunderbolt! I made this mistake and initially connected my monitors with a non-thunderbolt cable. It worked for one display, but it was really just running the DisplayPort mode over the USB-C cable. Once I switched it to an actual thunderbolt cable, it was able to drive both displays just fine.

Is your dock a USB-C dock, or a Thunderbolt dock? There is a difference!

If it’s a USB-c dock the bandwidth of the port is not the issue.

You need a thunderbolt3 dock.
