Ok here's the senario

I have an 8G ipod touch.. I DO NOT have a laptop..

I am in a hotel room, the hotel DOES NOT have wifi - they do have internet access, but only by Ethernet cable.

Is there an adaptor or router - some way that I can use the Ethernet cable to connect to the iPod?
 
You could buy an airport express and easily create a wifi network. But this is a pretty expensive way to go ($100) if you only are going to use it once. But it sure beats bringing a laptop if you plan to do this regularly.

Also, I think you'd need a laptop or desktop to initially configure the AExp, using the Airport Utility -- I don't think you could buy an AExp on the road and expect to plug it in and use it with your Touch. Could be wrong, but I seem to remember that my AExp wasn't useable 'out of the box' without configuring it, and you wouldn't be able to do that with just the Touch. I think you could buy one, configure it at home, then take it and your Touch with you on the road and use them with a wired connection.
 
You have to have WiFi in some form. That being said, you will need an access point. There are several that will work out-of-the-box, but they are not consistent. Your best bet is to buy an AirPort Express from an Apple Store, then ask them to set it up (explaining to them why you need it set up) or use one of their computers to set it up yourself, then take it back to the hotel and connect it. 90% of the time it will work, 10% it won't due to the detecting of multiple MAC addresses.

This is reason number 3 as to why I have an iPhone.

You still need an internet connection to the airport express - meaning you need an ethernet plug wherever you're trying to use it. Airport Express becomes your wi-fi base station. If you're out in the boonies, it's not going to help.

Some hotels need you to check in every day.
It's easier to use an apple laptop to share the internet connection.
