To open a .pdf for example I have to double click but can't find an option to change this to one click like you could on windows?
 
No. You need to learn to work with the operating system you're using. Select is a single-click, open is a double-click. This is consistent across all versions of the Mac OS since... forever, and there is no way to change it. The only thing you could do if you have an external mouse is to set the left-click functionality to a double-click automatically, but you're likely going to experience more frustration this way.

just do 1 click...twice...:D

you could put shortcuts to specific docs in the sidebar, or dock...
not sure otherwise. there's a purpose to how things work.

but hopefully someone else will come along with a better idea.
 
There's been threads about this, as far as I'm aware of there hasn't been an update presenting this option. I suggest you adapt. Aswell, I think it's commonly accepted that the way it works now, works best

Since when can you do that in Windows?

you can click a file then press the spacebar, and you'll get a preview of it. You can also drag the file into your dock and it will open in one click.
