Although I'm on a two year contract with my iPhone 6, I may get the 6s. How do I go about changing? Can I simply sell my 6 and put the sim into the 6s without telling my carrier and everything will work ok?
 
I can't speak for your carrier, but that's how Verizon works. Most contracts are not really for the phone, but for the line.

For most carriers, yes. If you are on a GSM carrier (AT&T, T-Mobile) or a GSM-dependent carrier (that is just waiting for more CDMA devices to be deactivated before completely moving to GSM) (Verizon) then you will have no problems.

Before you boot up the new phone however, make sure to swap over the SIM cards. It just makes it easier instead of waiting until it boots up. Did this with my 6 Plus.
 
You need to remove the SIM card before turning on the phone.

No, you can switch SIMs in the iPhone without rebooting. The only instance where I've ever had to reboot a phone when changing a SIM was some Android phones back in the day, but even they allow for hot swapping SIMs now.

My phone came with a new sim and as soon I turned on my old iPhone stopped working.
