Can I still jailbreak 5.0.1?

I've just received a replacement 4s as i broke my screen on my original. The new one has 5.0.1 on it rather than 5.1. Can I still jailbreak this or will it not work anymore due to not being signed?

Yes, you can Jailbreak.

Signing only matters when you are dealing with
restoring to stock.
