I've loaded up my iPad with a bunch of TV shows to watch on my journey home for the holidays. Can I delete these off (i don't have huge capacity) and then reload more shows (I'm using VLC) back on by connecting my iPad to my sisters PC which also has iTunes and load shows off my USB stick connected to her PC?

Only if the iPad is set to manually manage media. If it's set to sync, connecting it to another PC will wipe all media and replace them with what is on the new PC.

He's using VLC to view movies. I think he can just copy files into the VLC application using iTunes without syncing anything. That's what I do with my iPhone. I often load movies into a video player using iTunes on two different computers and I don't sync anything. I just tell my iPhone to trust that computer when it asks and that's all.
