can i sync only selected things?

I have multiple accounts on Mail. Can I select to only sync 1 or 2 of them and not all of them? Also, can I select to only sync Calendar and not Safari bookmarks, for instance?

Yes, you can mange all that through iTunes. I'd suggest taking a look at this.
