I have an early 2015 12 inch 1.3 GHz Dual Corr with only 8 GB of ram that is running Big Sur 11.7.11

I want to update the OS but it is not finding any updates so I am assuming that it can not be updated beyond this version?

I want to run basic programs on it such as Numbers and it indicates that I need at least 15.6 or later to install it

Is there anything I can do to update the Mac?

Read through the site and instructions on OCLP and see if it’s something you think you’d be comfortable doing.

I don’t think OCLP is a good idea for the OP, even though it is a good answer. The patch is for people who are tech savvy and are able to fix problems that may arise during and after patching. I think you would be better off staying away from patching, OP.
 
1. Which version of Mac OS could I upgrade the Mac to by doing this?
2. I’m going to try and watch a video on this. How complicated is it to do this? Can I brick the computer if I do it incorrectly?

I have used OCLP on my MacBook 12" 2015 and upgrading to macOS Monterey is probably the best for the MacBook. I updated it recently to macOS Ventura due to wanting to use the line App and WhatsApp due to dropping support on macOS Monterey.

macOS Ventura is "ok" and not too laggy, but going further upwards to a newer OS does tend to tap the very underpowered gem.

I still use my MacBook 12" 2015 and was hoping for the budget MacBook Neo to be the replacement, but...

It seems there is still a wait...but probably forever.
