Can someone suggest a good Mac Compatible desktop scanner that can turn a scan into a email or fax?

Are you talking about OCR? Any Mac compatible scanner will turn a scan into an image or PDF which you could attach to an email, or print and fax (or fax digitally).

I recommend the Fujitsu SnapScan range of scanners, especially for documents.

I second the vote for the Scansnap. I have a 1500 and it's been great.
