Like pics you want no one to see, and only you can get to by knowing the folder location?

Three ways I can quickly think of.
1.First of all, just don't put them in iPhoto and view them with a different app.
2.Create another iPhoto library and put them in that. For added "hidyness" have that library on a USB stick.
3. Store them under a new user that you only use for viewing these photos.

4. Make an encrypted disk image (Disk Utility.app), then copy the pictures there. Also be sure NOT to store the password on your keychain (there's a checkbox for this when mounting the disk image). Otherwise any time the keychain is open (and it usually is), the disk image can be mounted without entering the password.
