You should be able to do it but sometimes report pairing issues with Watches that are not longer supported such as yours. Honestly surprised a 7yr old watch is even usable.

Well my concern is series 3, someone just gave a new one to me, I am thinking should I just return it lol xd
 
In theory It should be supported. But you can try if you have a beta installed device. ios 16 should support last version of watchos tho.

I check other posts over here and Reddit, look like even Series 0 can connect to iOS 15.5 or even 16beta
 
I have a series 2 and it seems to work fine. I only really use for notifications and health tracking. Activity counts transfer fine. I’m still getting notifications.

But I’ve not tried to re-pair
 
iOS 16 beta runs fine with my watch 7 on watchOS 8 which is now technically an old version of watchOS as far as my phone is concerned. I have an unpaired watch 2 knocking about somewhere which I’ve not tried with iOS 16 yet, but based on past experience older watchOS with newer iOS should all be fine. What you can’t do is new watchOS with old iOS, e.g. watchOS 9 will always require iOS 16 or newer in order to pair.
