In my home we have two people, each each with their own Macs, each with their own Mac ID's, each with a unique home sharing library we watch on our Apple TV devices connected to our respective HDTVs. Both libraries are made up primarily of personal home videos. Each mac has its own external drive where the home videos are stored.

One library is housed on a 2017 iMac Pro using the library in the Apple TV app. The other is housed on a 2011 MacBook Pro which is still using an iTunes library because it can't be updated to a newer OSX. Serving the video library to the users Apple TV / HDTV is literally the only function the 2011 MacBook Pro is performing or needs to perform.
I was considering replacing the 2011 MacBrook Pro with a new Mac Mini as the OSX can't be updated and it will eventually fail due to age.
However, I was wondering whether it is possible to serve both home video libraries off just the 2017 iMac Pro running Monterey? I don't want one library serving all the videos to both of us. I want us both to continue to have our own libraries and not have the ability to see the others library on our HDTV's. I manage both libraries and do all updates, additions and deletions to both libraries, but I want them to remain separate and accessed on our Apple TV's/HDTVs via sign in using our unique Apple ID's.

Is this possible with just the one 2017 iMac Pro? If it is possible, are their limitations such as not being able to stream home videos from both libraries simultaneously? Any input would be appreciated? Thank you.

I don't see why using a differ profile or account on the iMac Pro wouldn't accomplish what you are attempting.

If you use a third party media service, like Plex, this could be done as well, all on the same account on your Mac.

To be clear, I don’t want to have to have each of us sign into the iMac Pro using our respective accounts in order to stream our respective libraries. I want to be able to leave the iMac Pro in my own account and have it “serve” both libraries simultaneously.
