When I added a 2910x2910 51MB .tiff cover art to my Jaws Soundtrack album in iTunes this is what happened:

So I tried replacing it with much smaller 500x500 70KB .jpg and nothing happens. I tried deleting it first, can't delete it, I quit iTunes and went back in, same problem. It seems I'm stuck with this cover art.

Is there a way of changing the cover art outside of iTunes?

Even in finder all tracks have this cover art and I can't change it:

Couple of options

Try to search for Tag Editors, if you have a Windows, you can try it there. Or an Android phone that would work too. It works similar as if you’d done it on iTunes

Or

If you have Photoshop, open the TIFF file and save if as PNG.
 
Did you paste picture into album info, or into cover art for each track? iTunes seems to use at least two methods to store cover art. One of them takes precedence sometimes. I have best luck selecting all tracks and pasting into get info. Sometimes Artwork shows in a second pane, sometimes in the info pane. It also shows in album view. Cut all of these (apple x) then paste your art back in only one of these places.
It'll still sometimes disappear after a year or two
