Can't change keyboard in email app

iOS 11.2.5

I've changed the default keyboard in settings to the Google keyboard, and that works well in the messaging app, but I can't find a way to select a different keyboard in the email app. Even if I delete every keyboard other than Google, it doesn't affect the email keyboard.

Am I missing something, or is it not changeable?
