My emails from my @me.com have my plain name (i.e. who its from) as my full name even though I've tried to change it to my nickname every where. I.e. I want it to be from John Smith but all the emails still come from Johnathon Smith. I can't figure where else to change this that I haven't already looked!

Cant figure out how to change iCloud from name

That'd be where I imagine it should be pulling it from... Did you try to change it there? Or are you talking about the actual iCloud website?
If so, click the gear at the top right of the page, click preferences. Go to the Addresses area. There's a box for full name there. Change it there, and you should be good to go.
That should be how you do it for iDevices and the website. Beyond that, I'm no help.
