I have all my movies and tv show on a portable 500GB external hard drive. When i watch an episode of a tv show or a movie i label it with a color so that i know that i have seen it. There are some files where when i right click a file and and go down to where the 7 colors are they are all grayed out. I am not sure if this is a bug or if certain files cant be labeled.

    Thank you

You don't have permission to modify the file. Right click it and set yourself as the owner of the file. Maybe the hard disk has become read only for some reason, or the format doesn't support it.

If your hard disk is formatted in something other than HFS+ (like FAT32 or NTFS), labels won't be available.
