When I'm on the phone and open the camera application, the switch for still/video is gone.

Can you guys check yours and confirm?
 
Could be to prevent a way to record the call which is illegal in some places.
 
Another thing I noticed is if you're listening to music and you open the camera and switch to video, your music stops. Video must just take a lot of processor power, and to avoid lag and crashing they made it this way.

It's not a big deal, I just wanted to make sure I wasn't the only one.
 
As a prosecutor, I wish they would fix this. Crime victims have to choose between recording evidence of the crime and calling 911. I wish people could call for help and then open the video camera while speaking with law enforcement.

This has been resolved with the iPhone 11. Users can record a video and talk on the phone.
