Noticed several other people having this on the Apple Support site.

Up until 15.2 when you plugged in your phone the music would start with the display on the song being played. Now it shows the top screen with "recent", playlists, artists, albums, songs, etc. You can press a button to start the music but not where it used to be.
Hope this is a bug that will be fixed an not a "Feature". Requires multiple steps to do what just happened.

I have had the same issue with CarPlay not going directly to the Now Playing screen on startup. Annoying for sure. I think it is a bug in iOS 15.2 as that is when it first started for me too. It started in the developer betas and was not resolved by official release of iOS 15.2. There is a small Now Playing icon in the upper right corner of the screen when CarPlay opens on the Playlists, etc options that will go directly to where it should be with the currently playing song showing on the screen.
 
This issue still persists in the most recent beta of iOS 15.3 as well. Apparently Apple is still in the business of breaking software and hardware that were working perfectly before and then never bothering to fix the bugs. The Now Playing screen used to come up automatically like it should through the release of iOS 15.1 but has been broken since the iOS 15.2 betas and now the iOS 15.3 betas where it always goes to the Library screen instead. Apple may not think it is a big deal but this gets really annoying having to manually select the Now Playing screen each and every time CarPlay is connected to the receiver.

iOS 15.2.1 is reported (by Apple) to fix a lot of issues with CarPlay music apps... curious to learn if 15.2.1 fixes this issue or if Apple is still off in the weeds somewhere...
 
This Now Playing bug is fixed for me finally in today's iOS 15.3 RC released today. Not sure if it made a difference, but I reported the issue last week using the Feedback app on my iPhone and received a response afterward that stated a potential fix was coming in iOS 15.3. I guess Apple was able to figure it out finally, at least for the time being (knock on wood).

I managed to fix my issue with the help of a fellow Subaru forum member. He had a similar issue to mine and rebooted his infotainment screen, which gave me an idea. I turned off and on my iPhone and my issue was resolved.
