I tried one of those AI Android adapters and they are terrible.
I wanted to know is it possible to mirror my iPhone Screen in my car. (Lexus 2021 ES350).

My thinking is I know I can connect my iPhone to a cable that does Lightning to HDMI and it works. Can I use that cable then do HDMI to USB?
 
Does your headunit in the car support carplay? Then you can simply connect the iPhone with a usb cable...
 
I can connect my phone and Carplay WORKS perfectly.
I'd like to SCREEN MIRROR my iPhone to the Screen using the Lexus Projector input as it doesn't have an HDMI.
 
Ok, then you need something which accepts the HDMI signal from the lightning to HDMI adaptor.
If your headunit accepts video unput only over USB you need some kind of framegrabber...
